        1.黃原膠是由甘藍黑腐病野油菜黃單孢桿菌利用玉米淀粉、經生物工程制取的生物聚合物，它是由葡萄糖、甘露糖、葡萄糖醛酸、乙酸和丙酮酸組成的生物多糖。黃原膠的分子結構決定了它具有其它聚合物無法比擬的性能：1 低濃度下高粘度特性；2 良好的流動觸變性或假塑性；3 耐酸、堿、鹽，抗氧化、酶解；4 耐溫，在若干次冷凍和解凍過程保持穩定，在高溫條件下保持穩定；5 與酸、堿、鹽、還原劑、表面活性劑、防腐劑、天然的或合成的增稠劑在同一溶液體系中有良好的兼容性；6 良好的分散作用，乳化穩定作用和懸浮顆粒、油滴能力。

        1. Xanthan gum is a biopolymer prepared by corn starch and bioengineering by Xanthomonas campestris. It is a biological polysaccharide composed of glucose, mannose, glucuronic acid, acetic acid and pyruvate. The low viscosity of the polymer determines that the structure of the polymer can not be compared with that of other polymers; 2 good flow thixotropy or pseudoplasticity; 3 acid, alkali and salt resistance, oxidation resistance and enzymatic hydrolysis; 4. Temperature resistance, stable during several freezing and thawing processes, and stable under high temperature conditions; 5. It has good compatibility with acid, alkali, salt, reducing agent, surfactant, preservative and natural or synthetic thickener in the same solution system; 6 good dispersion, emulsification stability and ability of suspended particles and oil droplets.
